Reason One: TASTE
The bold, musty, somewhat bitter flavor of extra virgin olive oil is excellent for many things! We love it too! But sometimes, a clean, neutral tasting oil comes in more handy for certain things. In fact, it is better to use a neutral tasting high heat oil for baking or frying. But more often than not, neutral tasting culinary oils are not too good for us. They are more than likely processed from genetically modified crops (GMO's), have been extracted and refined through a harsh chemical process to get it to the clean and neutral taste. In fact majority of conventional vegetable oils are GMO and hexane extracted, like soy, canola or corn.

Reason Two: HEAT POINT
Our avocado oil can be safely heated to 550 F without losing its nutritional benefits. That is pretty hot! While extra virgin olive oil can be safely heated up to 425 F, avocado oil can be used for higher heat cooking like searing vegetables in the wok or frying and grilling. Here is why the flash point is important: when oils are heated beyond their flash point, the oxygen start creating free radicals in the oil which is harmful to your health. Thus the oil starts oxidizing, and breaking down. When we ingest such oil, the oxidation creates inflammation in our bodies.
Reason Three: High in Important Nutrients
While avocado oil has less lutein and beta sitosterol than extra virgin olive oil, it still contains those antioxidants but in lesser amounts. However, avocado oil is higher in Vitamin E content than both olive and sunflower oil. Vitamin E is a powerful antioxidant, and it is the reason why avocado oil earned its esteem in cosmetic use and skin care. The use of avocado oil does not stop on our skin! However, there is a major difference in manufacturing and processing and is important to choose an oil that was refined using a gentle non-chemical process that maintains most of the nutrients of the oil and does no add artificial ingredients and chemical residues to the oil. It matters greatly how the oil was harvested, from which fruits , how it was processed and refined. In the oil processing world, there is a difference between chemical and non chemical extraction and refining process.
Chemically processed oils were more than likely hexane extracted and refined through chemicals like caustic soda and bleaching.
Caustic soda or sodium hydroxide is a strong chemical base in the manufacture of pulp and paper, textiles, drinking water, soaps and detergents and as a drain cleaner. Hexane is a know neurotoxin that is widely used to extract oil from oilseeed in conventional oil processing. Our avocado oil uses NONE of these processes.
