Vegetable curry
Oh my! This dish will provide quite a flavor burst. You can opt to make it spicy or sweet. We made it HOT! And the best part is is ready in 15 minutes! Flavorful, nourishing, vegan and quick. Just like lunch should be!
Ingredients:
Avocado oil for satuteeing veggies
1 bag frozen Asian stir fry mix
2 cups rice
2 tsp curry powder
1 tsp turmeric
salt, pepper to taste
red chilli flakes
1/2 tsp cayenne pepper
3-4 thai red chillies
1/2 cup cashews
1 can coconut milk
2 cups jasmine rice for side dish to sreve with
Step 1: sautee veggies in the avocado oil, Cook rice in water for 10 minutes then cover until ready to serve with the vegetable curry dish.
Step 2: add cashews and all the spices
Step 3: once the veggies are fully sauteed add the coconut milk and simmer another 5-10 minutes .
Serve with rice.
