Raw avocado Matcha blueberry pie
This raw vegan pie will sure please the crowd this Thanksgiving. Made of avocados, Matcha green tea powder and blueberries, it is nourishing, luscious and healthy.
Ingredients
For the crust:
1/2 cup walnuts
1/2 cup shredded coconut
1 cup dates
Avocado-Matcha filling
Half avocado
1 can full fat coconut cream
2 tsp green matcha powder
2 tsp almond butter
1/3 cup agave syrup
Blueberry filling
1 cup frozen blueberries
1 can coconut cream
1/3 cup agave syrup
Preparation:
Step 1. Place all ingredients for the crust in the blender and mix. Stop the blender and scrape the sides and continue mixing until you get a smooth spreadable consistency. Place on bottom of silicone pie shell and place in the freezer.
Step 2. Place all ingredients for the avocado Matcha filling and blend until smooth. Spread on top of the crust and place it in the freezer and wait 30 minutes.
Step 3. Place all ingredients for the blueberry filling in blender and blend until smooth. Spread on top of avocado-matcha filling.
Freeze for 5-6 hours. remove from freezer 15 minutes before serving.
