Fall Ratatouille

Ratatouille! A French peasant dish that brings together the best in Fall vegetables in one dish! 

We make ours with all the bounty that fall has to offer: butternut squash, yellow squash, zucchini, peppers all colors, and fresh tomatoes.

First sauté the butternut squash with peppers and garlic in avocado oil.

Once that's done, add the zucchini and squash cut into rounds , salt peeper to taste and stick on the oven for 30 minutes.

While the zucchini and squash are baking in the dutch oven, prep the tomato sauce: sautétomato sauce, pizza recipe, veggies, vegan recipes onions and garlic, then add a can of diced tomatoes and a fresh basil. Simmer until the sauce is cooked, for about 10 minutes. 

Top the rest of the veggies and bake for another 15 minutes.

You can serve it with cooked polenta, rice or baguette.
