Yummy nutritious kid approved breakfast. We are using borreal blueberries, because they are small, blend into the batter and cooks better.
2 cups unbleached flour
2 free range eggs
3 tsp avocado oil
1 cup organic almond meal
1.5 cup seltzer or mineral water
1 tsp baking powder dissolved in lemon juice
1.5 cup borreal blueberries
avocado oil for frying the cakes
Heat the pan and add 1-2 tsp of avocado oil. Add big spoonfuls of batter at a time and fry on both sides until golden brown.
Serve with pure maple or agave syrup, fresh berries, bananas or yogurt of choice. We made organic strawberry yogurt with chia seeds. See recipe here.
