It's a special time when you get to see your kids faces and laughter of joys when you announce 'We are baking gingerbread cookies tonight!" I love love love this time of year, it is so special and magical especially with seeing the kids excitment and joy around the Holidays.
It can be daunting to bake cookies though if you follow a special diet and cannot have grains, gluten, dairy, etc. Fret not! We got your back. We pulled our sleeves and experimented in the kitchen until we got it just right! And oh you will love these cookies! One thing to be careful is not to over bake them because they dry out very quickly in the oven.
However with the right technique (described below) you might just have the best cookies of the season. And healthy too!
1.5 cup almond flour
1 cup finely ground walnut
1/3 cup ground flaxseed or flax meal
1 whole egg
1 heaping spoon of cashew or almond butter
1/2 cup of avocado oil
1 tsp baking powder
1/2 lemon juice
Mix all ingredients in a large bowl until smooth and does not stick to your hands. if it sticks add some more almond meal.
