We love walnut rolls for the Holidays. It has been a family tradition for a long time. Christmas is not Christmas without this treat for us. The original recipe calls for butter but we replaced butter with avocado oil and it turned out more luscious, moist and delicious!
It is very important to prepare the dough first by kneading it by hand or using an electric mixer.
For the dough:
100 Ml milk (you can make it dairy free by using almond or coconut milk )
1 whole egg + one beaten egg for topping the dough
3/4 cup avocado oil
3 cups unbleached organic flour
1 tsp dry yeas
1 pinch salt
2 tsp raw sugar
For the filling:
2 1/2 cups finely grated walnuts
1 cup dried cranberries
1 cup raw sugar
Prepare the dough by adding all dough ingredients together and kneading for 20 minutes or using an electric mixer suitable for mixing bakery dough. Use lukewarm milk for all the ingredients to be worked together better and the dough becomes smoother and rises faster. Cover with a clean kitchen towel and rest it on room temperature for 30 minutes.
Once the dough has risen is ready to be rolled out.
Add all the filling ingredients to a bowl and add 2-4 tsp water until moist and spreadable.
Start at one end and start rolling it up.
Final step is to baste with an egg for shine and texture.
bake in the oven for 35-40 minutes until golden brown.
