Chilled cucumber avocado soup

This soup is our favorite in the sizzling summer heat! You only need 4 ingredients:

1.5 avocados, 1 long English cucumber or fresh pickling cucumber form the Farmer's Market, half red onion, 1/2 cup fresh dill or mint  and 1/3  cup of Neomega avocado oil.

 Add all ingredients to the blender and blend for 1-3 minutes until creamy and smooth. Add salt to taste. It's ready by the time you count to three. Just top with our chili infused avocado oil and voila! The cold zuppa is ready to be enjoyed in a nice shade with a glass of cold beverage of your choice.

Vegetable curry

Vegetable curry

Oh my! This dish will provide quite a flavor burst. You can opt to make it spicy or sweet. We made it HOT! And the best part is is ready in 15 minutes! Flavorful, nourishing, vegan and quick. Just like lunch should be!

Ingredients:

Avocado oil for satuteeing veggies

1 bag frozen Asian stir fry mix

2 cups rice

2 tsp curry powder

1 tsp turmeric

salt, pepper to taste

red chilli flakes

1/2 tsp cayenne pepper

3-4 thai red chillies

1/2 cup cashews

1 can coconut milk

2 cups jasmine rice for side dish to sreve with

 

Step 1: sautee veggies in the avocado oil, Cook rice in water for 10 minutes then cover until ready to serve with the vegetable curry dish.

Step 2: add cashews and all the spices

Step 3: once the veggies are fully sauteed add the coconut milk and simmer another 5-10 minutes .

Tuna Salad Sandwich

Tuna Salad Sandwich

This hearty lunch will satisfy the young and not so young. Home made tuna salad on organic multi-grain bread? Yes please!

It takes 10 minutes to make so a perfect choice on those busy days, which is....every day! Serves 4

Ingredients:

2 cans white meat albacore tuna

1/4 chopped organic onion yellow or red

1 stalk organic celery

3 tbs avocado mayo

salt-pepper to taste

juice of 1 lemon

For serving: 8 slices organic bread (we used multigrain here), iceberg lettuce

Preparation:

Add the tuna, chopped onions and finely chopped celery to a large bowl.

Mix it well with a fork. Add salt, pepper, lemon juice and mix in the avocado mayo.

Recipe for the mayo here. You can replace the avocado mayo with 3 tsp organic sour cream and 3 tsp avocado oil. 

Serve between toasted bread and lettuce.
