This soup is our favorite in the sizzling summer heat! You only need 4 ingredients:
1.5 avocados, 1 long English cucumber or fresh pickling cucumber form the Farmer's Market, half red onion, 1/2 cup fresh dill or mint and 1/3 cup of Neomega avocado oil.
Add all ingredients to the blender and blend for 1-3 minutes until creamy and smooth. Add salt to taste. It's ready by the time you count to three. Just top with our chili infused avocado oil and voila! The cold zuppa is ready to be enjoyed in a nice shade with a glass of cold beverage of your choice.
